Home, Family, and Pizza: The Story Behind Copaneazi’s Pizza South

There’s something comforting about walking into a place where someone already knows your name.

Maybe it’s the familiar smile behind the counter. Maybe it’s the server who remembers your usual order. Or maybe it’s simply knowing you’re among neighbors.

That feeling is exactly what Tony and Emily Galvez hoped to create when they opened Copaneazi’s Pizza South.

For the husband-and-wife team, the restaurant was never just about pizza. It was about building a business around the life they wanted to live, one rooted in family, friendships, and the community they’ve long called home.

Today, that vision has become a reality. On any given evening, the dining room fills with parents grabbing dinner before dance class, local families celebrating birthdays, friends catching up after work, and neighbors stopping in simply because it feels familiar.

It’s the kind of place Tony and Emily always hoped would become part of the neighborhood.

Built Around Home

Long before they opened Copaneazi’s Pizza South, Tony and Emily knew exactly where they wanted to be.

Not because it was the fastest-growing area.

Not because of traffic counts.

Because it was home.

Tony grew up in Jenks, attending school there from kindergarten through graduation. Years later, he and Emily chose to raise their own family in the same community. Their children attend Jenks schools, their daughter dances at the studio just steps away from the restaurant, and many of the people walking through the doors each day are neighbors they’ve known for years.

“I went to Jenks kindergarten through senior year,” Tony said. “Having this location out south, a lot of my friends live in the area. It’s like a high school reunion every night.”

Emily feels that same connection.

“We love our location because it’s closer to our home,” she said. “It’s closer to our community where we live and where our kids go to school.”

Choosing this location wasn’t simply a business decision.

It was a lifestyle decision.

Rather than separating work from family, they wanted to build something that allowed those worlds to come together. Choosing Jenks meant they could invest in the place where they were already raising their children, building friendships, and putting down roots.

That decision continues to shape everything they do.

More Than a Place to Eat

Great restaurants feed people, but the best ones bring people together.

That’s the role Copaneazi’s Pizza South has naturally grown into.

Families stop in before and after dance rehearsals. Youth sports teams gather after games. Birthday celebrations fill the dining room. Friends meet over pizza on the patio while their dogs relax nearby. Throughout the week, familiar faces become even more familiar.

“It just makes my heart so full to walk in and see so many people that we know,” Emily said.

One customer has become something of a legend among the staff.

He orders so frequently that employees joke something must be wrong whenever he chooses something different. When asked why he keeps coming back, he answered simply.

Life is too short not to eat the best pizza.

For Tony and Emily, that moment wasn’t memorable because of the compliment.

It was memorable because it represented exactly what they hoped the restaurant would become: a place people genuinely enjoy returning to.

Over time, customers have become regulars. Regulars have become friends. And friends have become part of the extended Copaneazi family.

Made for Sharing

While the relationships keep people coming back, the pizza gives them a reason to visit in the first place.

Tony has always believed that great pizza begins long before it reaches the oven.

Every pizza starts with house-made dough that undergoes a three-day cold fermentation process, developing the flavor and texture that have become signatures of Copaneazi’s. Sauces are made from scratch, ingredients are carefully selected, and every pizza is prepared with the same level of care Tony and Emily would expect if they were serving dinner in their own home.

“We put a lot of pride into our product,” Tony said.

That attention to detail extends beyond quality ingredients.

The Galvez’s wanted to create a menu where everyone around the table could enjoy the experience together. Whether accommodating food allergies, dietary preferences, or simply making sure every member of the family has something they’ll enjoy, inclusivity has been part of their philosophy from the very beginning.

“We wanted to create a place where everyone felt welcome, and everyone could eat together,” Emily said.

For them, hospitality isn’t simply about serving food.

It’s about creating a place where everyone has a seat at the table.

Built by Family

Even the restaurant’s name tells part of the story.

Years ago, when their son was only two years old, he invented a word during a family conversation.

That word was “Copaneazi.”

It made the family laugh, and somehow it stuck.

Years later, when Tony and Emily were searching for the perfect name for their restaurant, they realized they already had one.

Today, every sign, menu, and pizza box carries a reminder that the business began not with a branding exercise, but with a family memory.

It’s a fitting reflection of how they’ve approached the restaurant from the very beginning.

Family has never been separate from the business; rather, it’s the reason the business exists.

Giving Back to the People Around Them

Living and working in the same community has shaped more than where Tony and Emily do business; it has influenced how they define success.

Supporting local schools, nonprofits, youth organizations, and community events isn’t something they view as an obligation. It’s simply part of being a good neighbor.

Throughout the year, Copaneazi’s contributes pizzas to local fundraisers, partners with organizations like the Jenks Community Food Bank, and looks for opportunities to give back whenever it can.

“We love supporting the community that supports us,” Emily said.

Tony sees those efforts as an extension of the relationships they’ve built over the years.

When you know the families walking through your doors, giving back becomes personal.

It’s another way of investing in the place that has invested in them.

Growing Close to Home

Today, Copaneazi’s Pizza South reflects exactly what Tony and Emily hoped it would become.

Not simply a restaurant.

A place where neighbors gather after work.

Where families celebrate birthdays.

Where dance students stop in after class.

Where friendships grow over pizza shared around the same table.

For Tony and Emily, success has never been measured solely by what comes out of the kitchen.

It’s measured by the people who walk back through the front door.

Because after all, that was the dream from the very beginning: to build a business that fit the life they wanted to live and become a meaningful part of the community they already called home.

And every familiar face reminds them they chose the right place to do exactly that.
